Asparagus season is upon us, and we’ve been incorporating this healthy vegetable into our meal plan nearly every day. Fresh asparagus has a natural sweetness that’s delicious all on its own. With a few simple ingredients you can have a delicious side dish on the dinner table in no time! 

Asparagus is one of our favorite vegetables that we harvest from our garden. As soon as the thick spears emerge in early spring, we make this easy recipe on repeat for several weeks.

  • Fresh Asparagus: Firm medium sized spears are ideal

What type of asparagus is best to use in this recipe?

Nothing beats the sweet taste of asparagus fresh from the garden! But if you don’t have any currently growing, you can easily find in season asparagus at your local farmers market during spring or at the grocery store year round.

Does the size of the asparagus make a difference?

Use thicker asparagus spears if you like them crisp tender since it’s easier not to get those overdone. But, if you like your asparagus soft and crispy then use thinner spears.

How to make this Oven Roasted Asparagus Recipe: STEP-BY-STEP

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Rinse asparagus and drain or pat dry.
  3. Thick stalks often have woody ends, so you need to cut those off. 
  4. Optional: Line a sheet pan with parchment paper or foil if desired.
  5. Place asparagus in a single layer on the pan.
  6. Drizzle olive oil over the asparagus, and sprinkle with salt and pepper.
  7. Place pan in the preheated oven, and cook for 15 minutes.
  8. Remove the pan and turn the spears with a pair of tongs.
  9. Continue to roast asparagus for 10-15 more minutes until done.
  10. Remove pan from the hot oven.
  11. Serve and enjoy! The crispy bits at the tips of the asparagus are my favorite part!

Recipe Tips

Use fresh asparagus, and make sure to remove the thick ends.

If you bend the stalks, they will usually break where the stems start to get tough.

Decrease the roasting time if you love crisp tender asparagus instead of crispy.

Storage and Reheating

  • Store in an airtight container in the fridge for 3-5 days.
  • Try not to overcook when reheating.

Additions, Substitutions, and Variations

  • Add a squeeze of lemon juice or lemon zest before serving.
  • Chop and sprinkle on a few cloves of fresh garlic or garlic powder before roasting.
  • Shredded parmesan cheese before or after cooking is a delicious addition!

FAQ

Yes, either works fine! Oil lets you evenly coat the asparagus before cooking, but if you prefer butter just make sure to evenly distribute it around the pan after it melts.

When you can easily pierce it with a fork. You can take it out of the oven at this stage or leave it in a bit longer to crisp up.
